{"id":36083,"date":"2020-12-11T15:10:00","date_gmt":"2020-12-11T15:10:00","guid":{"rendered":"http:\/\/161.97.116.60\/?p=3629"},"modified":"2020-12-11T15:10:00","modified_gmt":"2020-12-11T15:10:00","slug":"docente-investigador-de-la-uma-publica-trabajo-realizado-junto-a-profesionales-del-csic-espana","status":"publish","type":"post","link":"https:\/\/bibliovirtual.uma.edu.pe\/web-uma\/docente-investigador-de-la-uma-publica-trabajo-realizado-junto-a-profesionales-del-csic-espana\/","title":{"rendered":"Docente investigador de la UMA publica trabajo realizado junto a profesionales del CSIC (Espa\u00f1a)"},"content":{"rendered":"\n<p><strong><em>Investigaci\u00f3n le otorga a nuestro camote un alto efecto antioxidante, pudiendo prevenir una serie de enfermedades, entre ellas el c\u00e1ncer.<\/em><\/strong><\/p>\n\n\n\n<!--more-->\n\n\n\n<p>El Dr. Rub\u00e9n Eduardo Cueva Mestanza, docente investigador de la Universidad Mar\u00eda Auxiliadora, de la mano con investigadores del grupo de investigaci\u00f3n de polifenoles del Instituto de Ciencia y Tecnolog\u00eda de Alimentos y Nutrici\u00f3n (ICTAN) perteneciente a la Agencia Estatal Consejo Superior de Investigaciones Cient\u00edficas (CSIC) con sede en Madrid, evalu\u00f3 el efecto por aspersi\u00f3n de los diferentes compuestos polifen\u00f3licos presentes en la ra\u00edz de Ipomoea batatas \u201ccamote morado\u201d originaria de la zona nortes de Peru. <\/p>\n\n\n\n<p>El trabajo de investigaci\u00f3n fue realizado con un equipo HPLC-QTOF-MSMS. En donde se identificaron nueve antocianinas, incluyendo cuatro peonidinas, tres cianodina y dos derivados de pelargonidina glicosilados con sodiorosa y\/o glucosa y acilados con \u00e1cido caf\u00edico, fer\u00falico y p-hidroxibenzoico. Veintinueve \u00e1cidos cinamoilquinicos (CiQA). Entre ellos, compuestos que nunca antes hab\u00edan sido reportados para alguna variedad de camote en el mundo. Tambi\u00e9n se observ\u00f3 que el proceso de secado por aspersi\u00f3n afect\u00f3 negativamente a los diferentes grupos fen\u00f3licos, con p\u00e9rdidas de polifenoles que representan alrededor del 90% de las cantidades iniciales. <\/p>\n\n\n\n<p>Este estudio tiene una gran importancia porque el encontrar estos compuestos presentes en una variedad de camote peruano tiene una gran implicancia en la salud de la persona debido a que los compuestos tienen un alto efecto antioxidante y pueden prevenir una serie de enfermedades entre ellas el c\u00e1ncer y el s\u00edndrome metab\u00f3lico, por tal motivo el consumo adecuado de esta variedad de camote podr\u00eda dar grandes beneficios a la salud de la poblaci\u00f3n.<\/p>\n\n\n\n<p>A ra\u00edz de esta investigaci\u00f3n se abre una serie de
